Last year, I did a project called the Breakfast Experiment and discovered that my ideal breakfast is vegetables and meat. It sounds simple enough, but sometimes I get bored of sautéed seasonal veggies. (Wait, really?)
Anyways, this smoothie is the solution. Lots of vegetables, a whole new shape. Yum.
2 celery stalks
2" slice of cucumber
1 teaspoon ground flax or chia seeds
huge handful of baby kale/spinach
1/4 cup cilantro, parsley or basil
1/2 cup frozen mango
juice of 1/4 lemon
1/2" nub of ginger
- Add celery, cucumber, avocado and water to blender. Blend until smooth.
- Add the rest of the ingredients, blend until smooth. Add water (or coconut water) until you've reached your desired consistency.
- Taste for sweetness. My tastebuds are super sugar-sensitive, but you might like to add a date or some apple sauce for extra sweetness.
Enjoy with a reusable straw! Freshest is the best, so drink this right away! If you make too much, you can have the leftovers tomorrow morning too, just add another squeeze of lemon and shake well!
