Anna lea made these for her babies last fall, and I was constantly coming up with reasons to stop by her house and grab one. She finally gave me the recipe, and last weekend, I helped a friend make apple sauce from the trees in her yard. Homemade applesauce made these particularly fantastic, but store-bought will work too.
½ cup coconut oil or vegetable shortening
¼ cup brown sugar
¼ cup maple syrup
½ cup molasses
½ tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. nutmeg
¼ tsp. ground cloves
1 tsp. vanilla
½ cup oat flour
½ cup coconut flour
1 cup all-purpose gluten-free flour
1 ¾ cup apple sauce
- Preheat oven to 350 degrees. Lightly grease 8"x12" baking pan, or muffin tins with coconut oil. Warm oil and add brown sugar, maple syrup and molasses.
- Add baking soda, salt, cinnamon, nutmeg, cloves, and vanilla. Stir into batter, blend well.
- Add flours and stir in apple sauce. Stir in optional chopped apples or walnuts, raisins or blackberries.
- For muffins, spoon batter into pan, barely filling each cup. Bake 25-30 minutes, or check with a toothpick. Delicious warm or cool; plain or with coconut butter.
