Anna lea made these for her babies last fall, and I was constantly coming up with reasons to stop by her house and grab one. She finally gave me the recipe, and last weekend, I helped a friend make apple sauce from the trees in her yard. Homemade applesauce made these particularly fantastic, but store-bought will work too.
½ cup coconut oil or vegetable shortening
¼ cup brown sugar
¼ cup maple syrup
½ cup molasses
½ tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. nutmeg
¼ tsp. ground cloves
1 tsp. vanilla
½ cup oat flour
½ cup coconut flour
1 cup all-purpose gluten-free flour
1 ¾ cup apple sauce
Preheat oven to 350 degrees. Lightly grease 8"x12" baking pan, or muffin tins with coconut oil. Warm oil and add brown sugar, maple syrup and molasses.
Add baking soda, salt, cinnamon, nutmeg, cloves, and vanilla. Stir into batter, blend well.
Add flours and stir in apple sauce. Stir in optional chopped apples or walnuts, raisins or blackberries.
For muffins, spoon batter into pan, barely filling each cup. Bake 25-30 minutes, or check with a toothpick. Delicious warm or cool; plain or with coconut butter.
